Focaccia Bread


You can have fresh soft focaccia bread on your table in just over an hour! And there is nothing complex about this one! I recommend using a mixer for this one, however if you are looking for an arm workout, this one will definitely help!

Ingredients

1 pack FOG Focaccia Mix

2 eggs (Cold - see tips below)

2 teaspoons Apple Cider Vinegar (ACV)

2 tablespoons oil (Canola/Vegetable/Olive)

2 cups hot tap water


Method


Prepare your baking tray and oven

You can use a square cake tin, a cookie tray (approx 26cm 39cm ) anything as long as it has sides!

I recommend lining with baking paper, this makes it a lot easier to get it out of the tray.

Mix the wet ingredients

In the bowl of your mixer add the eggs, oil and acv and mix on a low speed until emulsified (it will look thick and gloopy - technical term!)

Add the water and mix again on low speed.


Add the dry mix

Very carefully, add the dry mix. You can do this by adding a large spoon at a time whilst on low speed or gently tip the contents in. You will end up with a white cloud during this process, slow and steady will reduce the flour on your face.


Flavour

If you are adding herbs, or flavour, now is the time to do it (see tips below)


Mix and wait

If you have a stand mixer, gradually increase your speed until you are at high speed. Then mix for 2-4 minutes or until you can see the dough/batter is of a smooth consistency.

If mixing by hand, this will take between 5-8 minutes (longer if you need a break every now and then like me!)


Time to rise.

There are 2 options for proofing your bread. Either leave in a warm space for 30 mins or the quicker way is to set your over to 65 degrees. When ready, place a tray/bowl with boiling water in the bottom and pop your bread on the top tray. It will rise in 15-20 mins. Take your bread out of the over before you increase the temperature.


Let's Cook!

Set your oven to 190°C.

Oil your bread - if you have an oil spray bottle (not aerosol) use this.

Once your oven is at temperature, place in middle tray.

Check it at 25 mins, you may need to turn your tray around depending on your oven.

Your bread is ready once golden on top.

Lift your bread onto a cooling rack immediately (this will stop any sweating)

Wait until cool.

Tips & Tricks

Eggs - If you store your eggs in the pantry, pop them into the freezer for about 10 mins (no more than 15) and they will be ready.

Flavour combinations - Rosemary, Parmesan & Black Pepper, Fresh Olives, Roasted Red Pepper. You can add these once the mix is on the tray for a decorative look.

Serving - Don't cut your bread straight away, you will end up with a gluey slice of bread (I know it's hard to wait)
